Should I postpone graduation for a minor?

I would say, only do it if you are genuinely interested in what you're going to be studying (ie: you aren't doing it for med school purposes) and only if it's not going to be a financial burden. College is fun, and you only get to do it once.

edit: nvm, OP said there is no interest in the minor. If you aren't interested don't do it.
